Even with all the ‘don’ts’ that come with the use of cast iron cookware, it is a very forgiving material. You just have to know how to remedy accidents and misuse. If your cast iron griddles turn rusty it can be because of improper seasoning. It can also be caused by too much scrubbing or improper drying. To remedy the problem, scrub or sand off the rust; then, re-season your pan.

If you used your pan to bake at too high a temperature and food is stuck, start by scrubbing out all of the burnt food. After the usual cleaning procedure and the pan is dry, check the condition of the seasoning. My guess is that you will need to re-season your pan. Avoid future mishaps by lightly oiling your pan before and after each use. You can also enhance the seasoning by cooking fatty foods more frequently.
